Tertre Rôteboeuf belongs to François Mitjavile. There should be more winemakers like him. The unique terroir is situated on top of St. Emilion next to Troplong Mondot at St. Laurent de Combes. A part of the terroir is made of real limestone where the vine finds a very good source of water which contains a certain minerality. There is also the exposition to the sun and its small surface (5.75ha). Mr Mitjavile waits until the grapes are extremely ripe and until the seeds taste like burnt coffee. He harvests at the moment that the skin of the grape has become very fragile. The techniques that he applies are very simple, but the fruit is of incredibly good quality.
