This dry white Bordeaux comes from a terroir in the region of Sauternes, one of the most beautiful regions for the production of white wine. This Clos des Lunes has a magnificent hilly terroir planted with old semillons and sauvignon blancs. The vines are very old and only the best grapes (the perfectly ripe yellow-gold ones) are selected by the team of Domaine de Chevalier (Olivier Bernard). This man knows more than anyone else how a perfect white wine should taste and how it should be vinified. The harvest is done manually in bins and then there is a consecutive picking round according to the ripeness of the grapes. The wine ripens for 6 months on 25% oak and 75% in inox cuvees.
